Thanks for stopping by the Vegan Soup Kitchen! I’m Raven, and I’ll be your hostess while you’re here. I love soup, and I’m a vegan, so I thought I’d share some of my recipes. I could eat soup every day!
A little about me: I’ve been a vegetarian since high school (22 years ago!), and went vegan a couple of years ago, mostly because I don’t like the way animals are treated in factory farming conditions. We raised chickens just for fun for several years, and it broke my heart to have to give them away when we moved into a house where we couldn’t keep them. Chickens do have personalities, yes! It’s true. Just like cats and dogs (well, a little different, because they are birds, after all). We used to eat their eggs, but after a while, I couldn’t even do that.
I live in Costa Rica with my husband and son, and a whole bunch of animals (9 dogs and 4 cats). People ask me all the time if it is difficult to be a vegan in Costa Rica, and what do I eat? (I’ll admit to not liking a few things, such as mushrooms, cantaloupe, and salad.) It was difficult at first, but my attitude is that, if I go out to dinner or to a friend’s house, I’m probably not going to find much (if any) vegan food, and if I do, bonus! So I tend to either eat something at home beforehand. or ask if they will have vegan food available, or eat at places I know have vegan food. It really isn’t that hard. This site focuses on soup, but there is so much you can eat that’s vegan. My husband (a professional chef) says, when asked, that there are a few species of animals people eat, but hundreds of vegetables and fruits.
My husband and son are both vegetarians, but I’m the only vegan in the house. Even though my husband is the real chef around here, I’ve always loved making soup, and people usually love eating it. I hope you do, too.
My friend Manders will also post a recipe here and there. Yay! Maybe she’ll also write something about herself here (hint, hint).
